Puddings don't have to be complicated. Try impressing your dinner date with this cute fruit jelly dessert. Drop some delicate rose leaves on the top for added romance.

Strawberry & rosé jellies

Serves 8


150g/5½ oz small strawberries, hulled and sliced
1½ tbsp caster sugar
3 tbsp water
2 tsp powdered gelatine
200 ml/7 fl oz rosé wine

1½ tbsp caster sugar
2 tbsp rosé wine
Finely grated rind of 1 lemon
150 ml/5 fl oz double cream


Put the strawberries and sugar into a mixing bowl and mix together using a metal spoon.

Put the water in a small heatproof bowl, then sprinkle the gelatine over the surface, making sure the powder is absorbed. Set aside for 5 minutes.

Set the bowl of gelatine in a saucepan of gently simmering water and heat for about 5 minutes, stirring from time to time, until the gelatine is a clear liquid.

Divide the sugar-coated strawberries between 8 small champagne or liqueur glasses.

Pour the 200 ml/7 fl oz wine into a measuring jug and stir in the gelatine, then pour it into the glasses. Cover and chill in the fridge for 4 hours, or until the jelly has set.

To make the topping, put the sugar, wine and half the lemon rind into a small bowl and stir. Pour the cream into a large mixing bowl and whisk until it forms soft swirls.

Add the wine mixture and whisk briefly, until the cream is thick again. Spoon the lemon cream into the centre of the jellies, then decorate with the remaining lemon rind.
